Lemon Vinaigrette by Sheri Castle

Makes about 1 1/4 cups

Combine Ingredients:
2 large garlic cloves, finely chopped
1 large shallot, finely chopped (about 3 tablespoons)
1/2 teaspoon sugar
Finely grated zest and juice of 1 large lemon (about 1/4 cup)
Generous pinch of kosher salt
1/4 teaspoon Dijon mustard
3/4 cup fruity and fragrant extra-virgin olive oil
Freshly ground black pepper, to taste
